In dieser Arbeit sollte der Einfluss der Hopfensäuren auf die Milchsäurebildung während des Maisquellprozesses untersucht werden. Mit Hilfe von Vorversuchen konnte ein geeignetes Versuchsmodell für die systematischen Laborquellversuche entwickelt werden. Quellwasser mit einer aktiven Milchsäurekultur bildete die Grundvoraussetzung, um in weiterer Folge eine durch Zugabe der natürlichen Biostabilisatoren, erreichte Unterdrückung des Wachstums von Milchsäurebakterien erkennen zu können. Folgende Hopfenprodukte wurden untersucht: THI-α-Säuren, Hopfen-β-Säuren und Iso-α-Säuren. In den Laborquellversuchen zeigten die THI-α-Säuren bei allen Versuchsreihen die beste Hemmwirkung. Diese Ergebnisse konnten auch in Versuchen im Pilotmaßstab bestätigt werden.

In this thesis the influence of hop acids on the formation of lactic acid during the maizesteeping prozess was investigated. With the help of pre-trials is has been possible to establish a suitable model for systematic laboratory steeping trials. Steepwater containing active lactic acid bacteria are a prerequisite to test the effectiveness of the hop products to suppress the growth of lactic acid bacteria. The following hop products were used for the investigations: THI-α-acids, hop-β-acids, and Iso-α-acids. The results of the laboratory maize steeping trials THI-α-acids indicated the best inhibitory effects. The results of the laboratory maize steeping trials could be also confirmed in the pilot plant trials.
