This master thesis was a continuation of two previous theses by Ms. Natascha Richartz, "Gluten in the diet of three different patient groups in support of a gastroenterological ambulance" and Ms. Katharina Arnolder "Survey of the levels of macronutrients and gluten in the diet of children with celiac disease or other gastroenterological symptoms” [RICHARTZ, 2010; ARNOLDER, 2011]. Each of these three studies were conducted under the cooperation of the Department of Food Science and Technology of the University of Natural Resources in Vienna and the St. Anna Children's Hospital. The reason was a study of the St. Anna Children's Hospital, under the supervision of Dr. OA Vécsei titled "Celiac disease follow-up study in children with gluten-free diet." The first part of the analyses for this study gave Ms. Natascha Richartz, followed by the thesis of Ms. Katharina Arnolder. This presented thesis complements the two previous theses draws final conclusions of all results. In this thesis the protective effect of breastfeeding on the prevalence of celiac disease was analyzed and discussed. In addition, the prevalence and distribution of celiac disease was analyzed. The statistical analysis of dietary records on the distribution of the consumed foods by the subjects were calculated and discussed for 20 different food groups. Statistical analyses were performed using the statistical software STATGRAPHICS Centurin XV (version 15.0.04, Statpoint Technologies, Inc., Warenton, USA).
The results showed that age had no influence on consumption. Girls ate less rice compared to boys. Group A consumed less pasta, sweets, sweetened juices and vegetables than groups B and C, indicating an adherence to a healthy diet. In contrast, Group A ate less vegetables than B and C. In addition, Group A consumed the highest amount of salty snacks and Group C the least. The result of Ms. Arnolder that celiac patients, which adhered to gluten free the diet, took up significantly less protein has been confirmed by the higher meat and sausage consumption.
