Es wurden 29 Nacktgerstesorten auf ihren Phenolgehalt und ihr antioxidatives Potential hin untersucht. Der Gesamtgehalt an Phenolen wurde mittels einer Methode nach SINGELTON et al. (1999) ermittelt. Zur Ermittlung des antioxidativen Potentials wurden drei verschiedene Tests durchgeführt: TEAC-Test nach PELLEGRINI et al. (2003) bzw. MOORE et al. (2005), DPPH-Test nach BRAND-WILLIAMS et al. (1995) und FRAP-Test nach BENZIE und STRAIN (1999). Beim TPC-Test aus dem in vitro Verdau reichte der Gehalt von 250,60 ± 9,72 bis 682,42 ± 182,11 mg FA/100 g Probe. Der Gehalt an freien Phenolen reichte von 189,82 ± 1,78 mg FA/100 g Probe bis 524,60 ± 22,66 mg FA/100 g Probe, die gebundenen Phenole reichten von 19,79 ± 2,39 mg FA/100 g und 347,13 ± 14,62 mg FA/100 g Probe. Die TEAC lag zwischen 4,28 ± 0,04 und 4,77 ± 0,04 mmol TAA/100 g Probe beim in vitro Verdau, bei den freien Phenolen zwischen 14,58 ± 0,20 und 30,73 ± 0,12 mmol TAA/100 g Probe und bei den gebundenen Phenolen zwischen 19,45 ± 1,62 bis 32,50 ± 2,47 mmol TAA/100 g Probe. Beim DPPH-Test aus dem in vitro Verdau konnte eine Auslöschung der Radikalkonzentration von 14 bis 24% erzielt werden, bei den freien Phenolen von 13 bis 55%, bei den gebundenen Phenolen von 3 bis 58%. Im FRAP-Test lagen jene Proben aus dem in vitro Verdau zwischen 919,09 ± 166,27 und 2693,50 ± 142,37 µmol Fe(II) Äquivalenten/100 g Probe. Die Extrakte mit den freien Phenolen entsprachen 2041,86 ± 65,97 bis 6018,18 ± 1162,43 µmol Fe(II) Äquivalenten/100 g Probe, die gebundenen Phenole entsprachen 1118,78 ± 148,73 bis 34623,40 ± 2274,73 µmol Fe(II) Äquivalenten/100 g Probe.

29 cultivars of naked barley were analysed. They were tested for their content of phenols and for their antioxidant potential. To measure the whole content of phenols a method according to SINGELTON et al. (1999) has been used. The antioxidative potential has been detected with three different tests: TEAC-assay according to PELLEGRINI et al. (2003) respectively. MOORE et al. (2005), DPPH-assay according to BRAND-WILLIAMS et al. (1995) and FRAP-assay according to BENZIE und STRAIN (1999) At the TPC-assay out of the in vitro digestion the content of phenols has been adequate from 250,60 ± 9,72 to 682,42 ± 182,11 mg FA/100 g sample. The content of free phenols varied from 189,82 ± 1,78 mg FA/100 g sample to 524,60 ± 22,66 mg FA/100 g sample, and the bound from 19,79 ± 2,39 mg FA/100 g und 347,13 ± 14,62 mg FA/100 g sample. The TEAC lay between 4,28 ± 0,04 und 4,77 ± 0,04 mmol TAA/100 g sample at the in vitro digestion, at the free phenols between 14,58 ± 0,20 und 30,73 ± 0,12 mmol TAA/100 g sample and at the bound between 19,45 ± 1,62 and 32,50 ± 2,47 mmol TAA/100 g sample. At the DPPH-assay out of the in vitro digestion a cancellation of the original radical concentration from 14 to 24% could be reached. The free phenols cancelled 13 to 55% and the bound between 3 and 58%. At the FRAP-assay the samples out of the in vitro digestion lay between 919,09 ± 166,27 and 2693,50 ± 142,37 µmol Fe(II) equivalents/100 g sample. The free phenols accorded 2041,86 ± 65,97 to 6018,18 ± 1162,43 µmol Fe(II) equivalents/100 g sample, the bound phenols featured an oxidative capacity from 1118,78 ± 148,73 to 34623,40 ± 2274,73 µmol Fe(II) equivalents/100 g sample.
